Cauliflower Mashed Potatoes Recipe – 21 Day Fix Approved

Cauliflower mashed potatoes are simple to make. All you do is do the exact same thing you would if you were making regular mashed potatoes, but use cauliflower instead. My husband had a hard time getting used to eating these so at first I started with half potatoes and half cauliflower. Now, if you do that you will need to make adjustments to your 21 day fix calorie count. Cauliflower is green, but potatoes are yellow.

Two Fresh Heads of Cauliflower
(You can use just one, but part of success is prepping so if I cook something I like to make double and store it.)

Rinse your fresh cauliflower to remove any dirt. Take a knife and chop the cauliflower into smaller sections and away from the center brine. Remove any greenery. Drop the cauliflower chunks into a large pot of boiling water. Cover.
Keep checking your cauliflower for softness every 15 minutes. If a fork easily slides through then your cauliflower is ready. Make sure you don’t take it out before it is finished or your cauliflower mashed potatoes will be chunky with hard pieces. Not pleasant! Use a mixer and blend until smooth. Add sea salt and pepper to taste.
