Ingredients: 2 Chicken Breasts or 1 Whole Chicken, Greek Yogurt as needed, 4 Celery sticks.
Optional ingredients to add: Grapes, Pecans, Tomatoes.
Directions: Use my Crock Pot Shredded Chicken recipe for this, or boil 1 whole chicken, de-bone and shred it. Don’t forget to season with salt and pepper, or your favorite seasoning.
Many people prefer the taste of the whole chicken to the breasts. The breasts are somewhat drier.
Mix in your Greek Yogurt to the desired texture. Some like theirs creamier than others. This is up to you. If you
use alot of Greek Yogurt you may need to add 1 additional red container to your tally. Salt and pepper to taste.
Wash and chop your celery sticks into small bite-sized pieces and mix with the chicken salad.
21 Day Fixers: One serving is 1 cup of chicken salad and it is equal to 2 red containers and only a 1/4 of a green.
I don’t usually count very small things like that because they don’t make you or break you.
